When making a pie, you have a couple of options for finishing your piecrust. For a matte finish, brush the top of the crust with milk or melted butter. Then lightly sprinkle the top with granulated sugar. For a shiny crust, beat a raw egg with one tablespoon of water. Brush the top of your pie just before baking. Remember that the edges of your pie crust will bake faster than the rest, so cover the edges with a thin strip of aluminum foil. Remove the foil for the last 10 to 15 minutes of baking to give your pie crust an even color all around.
